Cooking Lab - Salt-Baked Chicken w XO Fried Rice (鹽焗雞配XO蛋炒飯)

A simple meal using the leftover chicken. Tonight I am using the salt-baked chicken (鹽焗雞 - readily available from any Asian BBQ shop) and its accompanied green-shallot oil. You can easily substitute it with BBQ Chicken with Gravy.

Ingredients:
-Salt-Baked Chicken 1/4 (Can substitute with BBQ Chicken) 
-Cooked Rice 2 cups 
-Eggs x 2 
-Frozen Pea 1 cup 
-Home-made XO Sauce (Any pre-packaged XO sauce is suitable) 2 T/s 
-Green Shallot Oil Sauce 2 T/s 
-Japanese Mixed Chili Pepper Powder (Shichimi Togarashi) for garnish 
-Cooking oil 2 T/s 
-Salt & Pepper 
-Light soy sauce 1 t/s

Instructions:
1. Add the cooking oil into the wok on high heat. Stir-in the XO sauce until fragrant. Add in the eggs.
2.Scramble the eggs and XO sauce until well-cooked.
3.Add in the Frozen Peas.
4.Add in the rice and mix well.
5.Add some salt & pepper to season and a dash of light soy sauce.
XO Fried Rice is Ready!
6. Shred the salt-baked chicken into thin slices and arrange them on top of the XO fried rice.
7. Garnish with the complementary green shallot oil.

(This got to be the best green-shallot oil I've tasted - Normally I just throw them away, as the salt-baked chicken is already tasty enough. This home-made dipping oil is salty and full of with shallot fragrant with a hint of ginger sweetness.It adds texture and depth to the beautiful salted chicken. Totally a  beautiful combination)

 
8. Season with a dash of the Japanese chili powder mix.

Totally delicious! We all went for a second serving  :D
