Cooking Lab - Christmas Gingerbread (聖誕雪花薑餅)

Christmas is all about snow and winter. Well, except in Australia, but that is not stopping us to create some icy-themed Christmas cookies ~~

平安夜,雪花一片片的飄下,穿戴著厚厚的雪衣,在寒冬𥚃追逐那飄渺的夢想。。。
hmmm, 嗯,這𥚃是炙熱的夏天,跟歐美的聖誕夜有點落差。來做個聖誕雪花餅乾來應景吧!

Cooking Lab - Baked Zucchini Slice

Zucchini slice is healthy and tasty; most importantly, it is super easy to make. At the same the time, you can add in loads of veggies for a super nutritious meal. Leave out the Proscuitto for a vegetarian dish.

It is simple, healthy and oh-so easy.



Ingredients:

-300g white zucchini 

-100g sweet potato 
-1/2 small spanish onion 
-50g red capsicum 
-1/2 truss tomato 
-3 slices of proscuitto 
-3 eggs 
-30g flour 
-10ml water 
-5ml olive oil 
-50g mixed cheese 
-Salt & pepper to season 
-10g fresh chive to garnish


Instructions:

1. Pre heat the oven to 180C.

2. Lightly grease the glass baking tray.

3. Combine zucchini, diced onion, flour and cheese in a large bowl.

4. Mix in a handful of sweet potato.

5. Add olive oil and eggs, mix well to combine.

6.Season with pink sea salt & pepper.

7. Pour the mixture into the glass tray.


  8. Bake for 20-25 minutes until golden and set.


 9. Remove and allow to cool.



10. Place the Proscuitto slices into the oven and bake for 3 minutes until crisp.

11. Serve the zucchini slice on plate.

12. Season with pink sea salt and pepper.

13. Garnish with crispy Proscuitto slices and chive.


  Look at the beautiful golden cross-section filled with vegetable goodness.

Cooking Lab - Oven-baked Parmesan Snow Pea Fries


A new easy alternative way to prepare snow peas. Just bake in the oven for a few minutes, and you will have a flavorful, crispy and cheesy snack that is better and healthier than potato fries.

Ingredients:

- Snow peas 500g
- 30ml canola oil cooking spray 
- 1/4 tsp fries sprinkle 
- 2 cloves of garlic 
- 50g mixed grated parmesan cheese 
Instruction:

1. Pre-heat oven to 220C.

2. Rinse snow peas, pat dry and line them on baking paper, do not overlap.

3. Add the garlic cloves in.

4. Evenly spread with cooking oil.

5. Sprinkle with fries seasonings.

6. Bake for 5 minutes turning once at interval.

7. In the final 3 minutes, top with mixed cheeses and let them melt and crisp up.


8. Let them cool down slightly before serving.


These are so addictive. Enjoy.


You are so going to love this simple veggie snack.

Cooking Lab - Layered Puff Sandwich (大黑松小倆口 起酥火腿肉鬆三朋治)

我很喜歡大黑松小倆口的起酥三明治。

內餡有三層:起士,火腿,肉鬆
挑戰部分:麵包要鬆軟,外皮要酥脆,口味要甜鹹適中。。。。來試試吧!

拿來當早餐配牛奶倒是滿適合的。

剛出爐的熱騰騰麵包是最香的!脆脆的外皮,麵包的奶油味加上溶化的起士,這口感真是棒極了!

Cooking Lab - Cauliflower Gratin in Blue Cheese Sauce (法式焗烤白花椰菜)

Today must be the coldest day in Sydney!

The perfect weather for baked cauliflower gratin. It is pretty easy to make and taste great. 

Coat the cauliflowers in thick creamy cheesy bechamel sauce - one absolutely delicious bake dish on its own accord!


超簡單的焗烤蔬菜。雖然用了奶油和藍紋乳酪,但全部都是蔬菜,感覺上還滿健康的。

是一道我覺得既讓人滿足又能搭配白酒的簡單的懶人烤箱晚餐。

A gratin is a type of French Casserole. A cauliflower gratin is a pretty handy dish when you’re busy and pressed for time. The flavour intensify when reheated. This a family favourite dish that is easy to assemble, delicious in taste and healthy at the same time.

This cauliflower gratin is pretty easy, taste great and doesn't create too much mess in the Kitchen. Plus it is a real versatile dish, you can combine this with half brocoli, carrots or with any other veggies you fancy. 

Smear or suffocate the cauliflowers in thick creamy cheesy bechamel sauce and there you have it!

Ingredients:

- 1 Medium Cauliflower, trimmed & cut into large florets.
-  200g bacon rashers, rind removed and finely chopped.
- 20g Butter
- 1L Skim Milk
- 2 tablespoon plain flour
- 20g Blue Cheese
- 10ml White wine.
- Salt & Pepper to season
- Grated Mozzarella Cheese 
- Sea salt flakes and black pepper
Instructions:

1. Preheat the oven to 200C.

2. Cut the cauliflower into bite-sized florets.

3.  Bring a large saucepan of lightly salted water to boil.

4. Boil cauliflower florets in salted water until 'al dente'.

5. Cook the cauliflower florets and cook for 5 minutes.

6. Drain the cauliflower florets and line them in an ovenproof dish.

7. In a separate fry pan, lightly spray some oil. Fry the bacon until crispy.


To Make the Bechamel Sauce:

a. Melt butter in pan.

b. Stir in the flour.

c. Cook the lump mixture & add milk.

d. Add more milk and whisk until thicken.

e. Melt in the blue cheese and a dash of white wine.


8. Pour the white sauce over the cauliflower.

9. Generously top with the bacon stripes.

10. Scatter the mixed cheese on top.

11. Place the tray into the oven and bake the cauliflower for 20 minutes or until bubbling and golden.

12. Remove from oven.

13. Serve immediately with salt and pepper.

Simply perfect as a classy side dish.


The dish is a little indulgent because of the white sauce, cheese and bacon. I think it is a relative healthy dish with 2 serves of cauliflower. This is a good side to any roast dish, too. 

This recipe is very simple to make and is absolutely delicious!
