Cooking Lab - Eggplant and Haloumi Origami Roll-ups Canapé

Baked eggplant tastes amazingly delicious with tangy grilled haloumi cheese and fresh leg ham. A flavorful appetizer or side dish for all occasion. They also match well with any lamb dishes. 

Combining my favorite ingredients together for this yummy canape-style snack.

希臘的羊奶乳酪 ー Halloumi含鈣量高。它可以燒烤或串烤至金黃色。


它的起司味不會太濃郁,看吃來跟吃吃來都有像蛋豆腐。口味很特別。燒烤後會有點鹹些。


Ingredients

-Roasted Eggplant pieces
- Pittas Light Cyprus Haloumi Cheese sliced lengthway 250g $7.99 
- 1 bunch of fresh Rocket
- Premium Round Leg Ham 300g $17.99/kg 
- French Onion finely diced 10g 
- Lemon Juice 
- Olive Oil 50ml 
- Salt & Pepper to season 


Instructions:

1. Line a baking tray with baking paper. Preheat oven to 220C.


2. Brush some olive oil on the roasted eggplant, season with salt and pepper.



3. Arrange eggplants and Haloumi cheese onto the pre-heated tray so they do not overlap.


4. Bake in the oven for approx 5 minutes; or when the Haloumi cheese turned golden and the eggplant has softened. Set aside to cool.
5. Cut the round ham pieces into 4 equal quarters.
6. Place some fresh rocket onto the ham, place the grilled Haloumi on top. Follow by some roasted eggplants.

7. Drizzle lightly with lemon juice and garnish with onion dices.


8. Fold the leg ham cross-over at top. (Think of it like wrapping a blanker over a baby :) Secure with a toothpick if you wish.



9. Serve them cold or at room temperature


10.The process is not long nor laborious but you will get an elegant, healthy and quick finger-food snack meal.


11. Enjoy with a nice glass of white.
