Cooking Lab - Braised Budda Mushrooms in Oyster Sauce

These beautiful fresh plump shiitake mushrooms taste velvety and delicious. It is a great vegetarian dish for all occasions. You can find these gorgeous mushroom in all leading Asian supermarkets. 

You can substitute with button mushrooms or portabello mushrooms.

Ingredients:

- 300g fresh shiitake mushroom 
- 100g steamed broccoli florlets 
- 1 tablespoon oyster sauce 
- 1 teaspoon soy sauce 
- 1 teaspoon potato starch flour 
- 1/2 cup water 
- Salt and pepper 

Instructions:

1. Gently rinse the mushrooms and pat dry on paper towel.

2. Heat oil in a deep pan on medium high heat.

3. Add the mushrooms into the smoky pan.

4. Season with oyster sauce, soy sauce, sugar and season with salt and pepper.

5. In a shallow bowl, dissolve the potato starch in the water.

6. Pour the liquid into the pan.

7. Reduce heat to low and allow it to simmer.

8.  Braise until all liquid is reduce and thicken.

9. Add in the shallot.

10. Season with more oyster sauce if required.

11. Arrange steamed broccoli around the plate.

12. Serve the braised shiitake mushrooms at the center.

13. Garnish with roasted red pepper and sesame seeds.


Serve Hot. 

A great winter warmer dish.
