Cooking Lab - Japanese Udon Noodle Soup w Fish cakes

A late night out - need something quick to satisfy our hunger.

Looking around, around - what is in the fridge ... anything in the pantry??... Ah-ha.. I think I can work out something decent!!

A nice warm hearty udon noodle soup with assorted fish cakes! Yum~~

This is super quick and easy - meal in no times.





Of course - got to add a soft boil egg (温泉たまご) for nutrient value. Love the running gooey yolk!

Cooking Lab - Croque Madame w Wakame Salad

Having a Croque Madame as part of a lazy Sunday brunch.

Making a super healthy Wakame salad on the side to balance out the rich buttery, cheesy flavor.

Dreamy béchamel and egg yolk. Dreadful for the heart, fantastic in the mouth.

This is one marvelous sandwich!

How can one not be tempted by this simple hot ham and Gruyere cheese sandwich? Walked past the Bakery and that golden egg yolk stopped me in my tracks. Saute in deep butter until golden brown. A totally scrumptiously addictive sandwich.



Warm it up in the oven !~~ Watch the bubbling melting cheese ....  ^^

Cooking Lab - Camembert Chicken Sausage Dinner w Whole Bean Salad & Kale Chips

Dinner doesn't get any easier and gourmet than this - and yes, I am opting a quick lazy dinner preparation. 

A couple of friends are coming over for dinner and do our annual Christmas gift exchange. As the host for this year - I left really to the last minutes. So it was rush rush, go, go go!

Simple, yet a perfect cool Summer night meal - Camembert & sautéed Onion Chicken sausages with beans salad. Served with olive bread & Kale chips!
    
Camembert Cheese & Sautéed Onion Free Range Chicken Sausages $7.99/420g

(In rich Camembert cheese melded together with sautéed onions) from Woolworth's Gold Gourmet Selections 
 
While I was having trouble to come up with a dinner theme tonight- there was free tastings at Woolies to introduce their new gold gourmet range sausages. - Problem solved!!

There was a wide range of gourmet artisan sausages. All sounded fancy and schmancy!

I picked the chicken range because no one really can fault chicken sausages. 

1. Grill/cook sausages until golden.
Watch for the oozing Camembert cheese!

Too perfect!! Delicious and different.

Now got a main - need to think up the sides to go with it.

Last year, they went all out for the annual Christmas dinner, to reciprocate I can't just serve loose garden salad leaves and mash....that would be seen not trying at all ..... (even though I am not really ...)

Got to show some effort - hence the Superfood Kale Chips as one of the sides!

This was such a big hit, my guests were health conscious and absolutely adored this! They munched away almost half of the Kale chips before I can save some for the main meal... 
Rustic Kalamata Olive baguette $3.00

Freshly baked soft baguette, perfect with dips or as Brushetta.

Whole Bean Salad - Sweet Potato, mixed beans, corn kernel, apple cider vinegar & extra virgin olive oil, salt & pepper.
Ta-ta!!! Not too bad an effort. I hope*
My take on the 1 meat and 3 veggies dinner solution.
The chicken sausages tasted divine with the salty Kale chips and the olive bread. The tangy beans salad balanced flavor. 

Quick, simple and yet stunning. Judging by the clean plates....I think I passed.
Next time - I seriously will put more effort into it ( ..I think I said that the year before :)

Cooking Lab - Kale Chips (無負擔零食:羽衣甘藍脆片)

love my potato chips. Actually, I enjoy all types of crispy salty snacks and won't mind if they are green.

Warning: you will fall in love with these! Very addictive~

在國外生活總會看到奇奇怪怪的綠色蔬菜。每次看到Kale(羽衣甘藍)總是懷疑這是拿來觀賞用的吧?
像香脆的薯片,更像韓國海苔的口感!
不用油炸,只要在烤箱烤十分鐘。
簡單地吃進更多的蔬菜和營養。
大小朋友都會喜歡。

All hail - it's super food Kale!

Kale is being called 'the Queen of Greens' - high in fibre, iron, vitamins, calcium and antioxidants. Low in Calories and fat. 

We are going to enjoy the superfood in chip form tonight - a fun way to eat your hearty greens.

Got the fun recipe off a friend and decided to give it go for a small dinner party and see how well it goes...

Stunning Curly Kale $1.99/bunch

Ingredients:

- 1 bunch of Kale (I selected the smallish variety for the tender soft curly leaves; there are other jumbo size Kale but I found the stem & the leaves are too thick & rough.)
- Olive oil 2T
- Canola Oil Spray.
- Fries Sprinkle.
- Salt & Pepper to taste.


Instructions (fairy simple):

1. Preheat Oven to 200C.

2. Cut off the stem and the leave stems from the back.

3. Tear leaf into chip-size pieces.

4. Wash and throughly dry the Kale.

5. Place them in a large bowl and drizzle 2 tablespoons of olive oil on the leaves.

6. Lay them on baking paper and bake for about 10 minutes. (Spray with canola oil when they gets too dry or if necessary.)

Note: Keep your eyes on them to make sure they don't overcook. They can get burn easily!


Ha! My secret seasoning:- McCormick Fries Sprinkle $4.99 400g.

It contains a combo of paprika, salt, chilli pepper, garlic & onion. Goes really with fries - and of course add wonderful flavor to the Kale chips tonight!

These Kale chips are pretty fantastic - so light and crispy but most importantly - it's guilt-free!!!

Enjoy something nutritious and crispy!


I made 6 branches of Kale into chips and seriously they don't last. They were all gone in 5 minutes between 4 people!! 

"At least it's super food Kale - so keep them coming" they said.

Light and very unsatisfying - they wanted more!!!



Be warned: you will fight with your kids for that last chip. It is addictive ~

Cooking Lab - Tuna Natto Rice Don (ツマ納豆丼)

Sharing my favourite quick-meal invention recipe - Tuna Natto Stir-In Rice!!!

This is the perfect quick meal when you have some rice leftover and not sure what you can do with it!

Smashing meal in a bowl with wholesome ingredients: Tuna in Extra Virgin Olive Oil; Japaneses Natto with shallots and pickled ginger.

Natto - Fermented soybeans - high in nutrient and low in calories but definitely an acquired taste. 

Think of this like blue-vein cheese. Distinctive adore but adored by many.

Ingredients:
- 1 pack of natto.
- 1 can of tuna in extra virgin olive oil.
- 2 cups of cooked rice.
- Shallots & pickled ginger.
- Soya Sauce
Instructions:
1. Thaw the natto packet in room temperature. 
2. Each Natto packet should contain mustard sauce and (納豆のたれ) soya sauce essence especially for natto. Mixed  well until gooey.
3. Empty the tuna and the olive oil in a microwave-safe dish. Add a dash of soya sauce. Mixed well.
4. Heat in microwave on high for 1 minute.
5. Slice shallots into thin pieces. Mix well into the rice.
Gooey natto mixed with Tuna rice.
A healthy quick meal in 15 mins and leave us all the time to play!~
