XO Fried Rice is Ready!
6. Shred the salt-baked chicken into thin slices and arrange them on top of the XO fried rice.
7. Garnish with the complementary green shallot oil.(This got to be the best green-shallot oil I've tasted - Normally I just throw them away, as the salt-baked chicken is already tasty enough. This home-made dipping oil is salty and full of with shallot fragrant with a hint of ginger sweetness. It adds texture and depth to the beautiful salted chicken. Totally a beautiful combination)
8. Season with a dash of the Japanese chili powder mix.
Totally delicious! We all went for a second serving :D
